Behind the scenes
A little behind-the-scenes honesty from the bakery today.
One of my most-loved ingredients, Droste cocoa powder, quietly stopped operations back in February. A Belgian company has acquired the brand, but production hasn’t resumed yet — which means my trusty supply is officially almost gone. I’m genuinely sad about it.
Droste has been a cornerstone in many of my chocolate bakes, and finding a replacement isn’t as simple as grabbing whatever’s on the shelf. Right now, I’m deep in research and testing, comparing cocoa powders to find the best possible alternative — one that meets my standards and does justice to the recipes you love.
This is one of those invisible parts of running a bakery: sourcing, testing, retesting, and sometimes letting go of an ingredient you truly love. But it matters. The quality of what I bake is only as good as the ingredients that go into it, and I take that responsibility seriously.
